Two thoughts I had while watching:
(1) The lanyard would be getting blood & schmutz on it, possibly a sanitation issue. I'm sure you scrubbed it up well afterward, but had it been removed from the start that consideration disappears.
(2) I was hoping for a sharpness test (paper cutting?) before and after cutting up the carcass to illustrate how well the edge held up, especially in light of the bone work performed.
Nonetheless, thx for putting in the time & effort to document the process.
I'm not the OP, but I've been using my Busse Slicer in Elmax for bird processing. Just finished a 3 day sea duck hunt in Cape Cod. Processed over 50 birds and the edge is still razor sharp.Did you check the edge afterwards?
