I was freehand sharpening a knife, and I spent at least a couple hours doing this before I noticed that I had one side at a lower angle than the other, because when the blade is faced away from me it appears higher than it is. I tried evening it out just by sharpening only the other side a lot, but I've been doing that a long time and it doesn't seem to have been corrected yet, and I'm afraid of screwing it up more. Is there a way to make sure I do this right?

You've got a burr formed. Read the sharpening section in the FAQ portion of this forum, and you'll find the answer to your questions.

Thanks.

I feel stupid when it turns out the answer I was looking for is already in this site's help guide.

To make sure the edge is even you hone the same amount on both sides. However with any freehand honing, there will be some variance in edge angle and height from side to side.
