Semi-custom chef's knife

Okay, despite a burning lust for one of Murray Carter's chef's knives, I just don't think I can talk myself into the $450 price range. So I've been looking at semi-custom chef's knives. I have a George Tichbourne, but I just can't get used to the size.

Here are the two that have made the initial cut so far, the New West Knifeworks chef's knife and Steve Mullin's Pack River 8" chef's:

I'm not familiar with either one. I did speak with the owner of New West, and he was great to deal with. Very knowledgeable and a former chef -- a big plus. The knife is AUS8, however, which doesn't really thrill me, but would probably be all right for a chef's knife and certainly head and shoulders above the Henckels I'm using now. The rest of the line is made of a Swedish steel called DP19637, which I've never heard of. I really like the blade shape. Made by Mike Merriman.

The Pack River is ATS34 which has some wow-factor in the kitchen, but I'm not as wild about the handle shape. Also not familiar with Steve Mullin.

Both are in the $125-175 price range that's currently feasible.

Does anyone have experience with either of these two makers?

Check out Murray Carter's "Muteki" brand kitchen cutlery. The price on a 5.7 sun (approx 6.78") Wabocho is $65.00.

For just over $200 you can have a nice 7"+ "Chef's knife"

I have a Wabocho and Funayuki-bocho from the "Stainless Fukugo-zai Series" that were less than $150 for the pair. Excellent value, but they are not fancy.

I've already asked Mrs. Claus ;) to place an order for a Deba-bocho from the "High Grade Series."
