Sawing bread just sounds wrong. Its a waste of gluten. You can't eat the crumbs.

We built a wet grinding machine early this year, which makes possible extremely thin grinds, after heat treatment.

This bread knife measures 0.085 at the ferrel, with a fine distal taper to the tip.
W2 blade meas. 8.25 OA 13.25
Ferrel is made of: Sea cow rib bone--Water Buffalo horn--green and black G-10--416 SS. Handle wood = California buckeye burl.

This is our new VS wet grinder. A great investment if you want to grind thin blades.

I'm also in your league of bread slicers...even soft bread doesn't get squeezed by thin grinds

Thank you. The machine is a compilation from two earlier machines we had in the shop. The top is a Pro-Cut 2 x 72 the base that holds the motor, control and the machine proper is a Craftsman 6 x 48 i used as a wood worker.

Geez! Thanks for this thread. For some reason, it never occurred to me to use one of my thin bladed knives on bread (must be missing a few neural connections). I went and gave it a try, sure enough, it worked better than the bread knife/saw I had been using. And no "saw dust" either.

Beautiful knife and nice setup on the wet grinder. Thanks again. Mike
 
Nice looking blade! Can you post a picture from the top so we can see how thin the blade is?
 
You're the only other person I know of that bought one of Bruce Draper's grinders besides me. I like what you did with yours. How do these belts hold up to being wet?
 
in my experience, depending also by how your wheels are dressed and aligned, jflex wants to curl when removed wet by the grinder.
It is somewhat a pita, but if you hang them with a little weight they dry quite straight and can be reused without fighting to unroll the curls while installing on the grinder. WHile wet grinding they hold fine, the same or better than wet and dry paper.

This grinder came from Koval knives, Columbus Oh. 1999 or so. I don't know if its Mr. Drapers design or who made these units for Mick Koval. They are pretty basic, but a well built machine; this ones been running since new with no maintenance other than keeping the bearings greased. Fred

This is my experience as well. The finer grits, 1000 2000 stay fairly flat when wet. I'm looking into cork belts to replace these. They come in a broad range of grits. They nee to be dressed when new or so I understand. Their info says they will last for years if dressed properly. Do you have any experience with the cork belts?

Fred, I have a LOT of experience with cork belts which I get from Pop's.

1. I have not used them wet

2. I use them to do satin finish that rivals sandpaper, and to break edges/grind swedges, which they do exceedingly well.

i have no experience... as i said before, here where i am i can get max 400 grit belts, of unknow origin, that came in blue and brown :o
Someday i will place an order for the gator, cubitron, cork, 600-2000 grits....to try all the nice goodies you have in the States, even if the shipping will be higher than the price!!
As i did for my precious stash from NJ BaronSteel :)
