I picked up a Kanetsune Seki 301 at the blade show. It had a rough finish to accentuate the damascus pattern which was too rough for a chef's knife, so I gave it a scotchbrite belt finish. After refinishing it I had to resharpen it. This is the first time I've ever gotten anything to 100% top chop hairs. I measured the edge thickness behind the edge at .004".

Anyway, I just dropped a grape on it and it was neatly cleaved in two, so I just had to tell someone...

Nope, just plain old VG10, at 61 HRC (according to the fellow at the table) which is fairly high for that steel. Works though.
