Get an old mouse pad and some 320 grit sand paper. Put your knife flat on the mouse pad with no sand paper and using only the weight of the knife push it forward and slowly lift the back of the knife untill the edge starts to bite the mouse pad. thats the angle you want to keep. Put the sand paper on the pad and try to keep your knife at that same angle ( again using only the weight of the knife ) push it backwards. when you get to the end of the sand paper stop make shure you don't roll the edge at the end. Work one side of the blade untill you get a burr on the entire edge, then the other side. when you get a burr on the second side. go back to the first side and alternate side to side untill the burr comes off.
I use 320 or 220 sandpaper because it gives a good toothy edge good for slicing , you can use 400 or 600 if you do more push cutting.
