There have been a few people on this forum asking questions about the best way to sharpen ceramic knifes and I had given advice to people but had never taken a stab it so I took a stab at it tonight and thought I would post my result's.
I started off with a F120 CBN stone and then used a F240 F400 and F1000 CBN stone and that was it.
I didn't see any sign's of chipping on the edge at all from any of the stones,I thought the F120 maybe a bit to coarse but you never know unless you try.
A lot of people including myself thought that a ceramic knife would be very chippy when being sharpened and I can say this ceramic knife was fine and I slipped once and bumped the stone into the edge and gave the edge a micro chip but that was it,I can say that all ceramic knifes are going to sharpen with out chipping being a problem but this knife went very smoothly.
The stones cut threw the ceramic pretty well but seemed to slow down a good bit more in the finer grit's and the most with the F400 and F1000 stones,it isn't as sharp as what I got it from the factory and I think I may have went with to fine of a grit stone because the F1000 is the same as a Jis 4000 grit stone and I don't know how ceramic performs the best but I will play around with that some later on.
