If you don't know how to sharpen freehand, maybe you should try a Lansky system. Important thing to remember is that the first time you sharpen, you'll have to set the angle to the new angle, which can take a long time or a short time depending on how different the new angle is from the factory angle.

I've seen people sharpen and they get angry at the system and think it doesn't sharpen, because they aren't using the stone to grind a new angle and it really doesn't ever reach the end of the edge (which is where the cutting begins).

Start with the coarse stone and after you feel the metal fold over and make a wire edge/burr, flip it over and do the same to the other side, until the burr raises on the other side. Then start going to finer stones.

The system works great for beginners, and it only costs like $25 at some internet retailers.

I used to use a Lansky to sharpen my knives until I bought the Edge Pro system (another GREAT system, but a higher price range). Then I switched over to using a belt grinder (have to be careful when using that one).
