hi again,
has any one here tried the "chefs choise"
line of electric sharpeners?
they claim to provide a trizor edge, what
is this?
if these are no good. are there any affordable electric sharpeners that do a
good job?

Never heard of those sharpeners. I do know that the Spyderco 203 works for me. I think they're on sale at the BFC store. You might want to check them out.

The only electric sharpening device I use is a 320 grit wet stone sharpening doomaflickey I got for my birthday. It came from Sears, has a water stone wheel and I am only using it to grind relief. Them things you drag your knife blade through are destructive to edges (at least the ones I have seend have been!) If you want something fast and effective, get the sharpmaker!

I`ve always been afraid to use any kind of electric sharpener after I`ve seen what they do to my cheap kitchen knives. They are very destructive. I plan to stick with my manual sharpeners.

The only electic sharpener I would be willing to try is an oscillating whet stone by AMT. It has a square table like recess that you put normal 3x6( or something close to that size) japanese water stones in. A resevoir above the stone keeeps a fresh supply of water dripping on the top of stone as it vibrates back and forth.Thre is an angle guide that you simply hold the knife on with the edge against the stone. It has a small buffing wheel too. Any stones that are the ight size will work in it. I think there were some jigs and clamps that you buy as accessories to. Haven't seen one in a while, they were less than $100 bucks, more like 50 I think.
The problem with the electric diamond and ceramic sharpeners is even if they do put a decent edge on your knife, they eat the blade of quick . Its like using a bench grinder to reset the edge bevel every time you want to polish the edge a little more.

My experience with electric sharpeners is not good!!

I highly suggest that you aviod them at all cost.For doing initial grinds,,they might be fine,, I'm not a bladesmith,, but for a final grind,, thats exactly what they will do.. Grind...

A lot of these sharpeners have carbide wheels that will actually Shave off metal.

Get yourself a decent sharpening system like the Lansky or Apex... They'll cost you a little more,,but they won't damage your blades and give you a Pro Edge!

Paper wheels on a bench grinder seem to work good. I built mine out 1725 rpm motor, and a long mandrel from a knife supply dealer. Many sites sell these wheels, about $20.00. Also leather wheel hones,(woodCraft Supply) in a cordless drill at slow speed work well.

I have one of those chefs choice sharpeners. It works fine for kitchen knives, but i wouldnt use it for fine cutlery. Also, if your knife blade is over about 1/8" thick, it wont fit into the slots on the sharpener.

The "trizor edge" is created by using the 3 sharpening slots on the sharpener to create 3 different bevels on the knife edge.

Search around, this guy isnt what you need for anything other than just kitchen cutlery.
