My eyes aren't the greatest anymore but my 3 Cultellus knives look like a semi-convex with a final bevel on each side. Anyone know exactly what this edge is and the best way to touch it up without changing it from it's original form.

I reckon you just strop them gently with a bit of buffing compound and leather. They'll come up like scalpels.

None of mine have a convex edge.
Not sure of the exact edge angle, but on the cultie I use I just give it a few swipes on the 20 degree(per side,40 inclusive) setting on a Sharpmaker and its good to go.
I usually only use the reg white fine rods, but if I want to get it a very smooth puch cut edge I'll hit it a few licks on the UF rods, then strop with compound.

If I slip up and let one get Dull I'll use a stone. I only use the sharpmaker for touch up and final edge work. Getting lazy, and the sharpmaker is just so easy for touch ups.

Man...after all this time I still do not know how to sharpen, and my Cultie really needs it. Ugh.

Its much easier than you would think Jason. You could pick up free hand with some cheaper knives, and get a Sharpmaker(or other brand with set angle... edg pro, lansky, etc...) untill you get the freehand down.

Once sharp you could leave your Sharpmaker set up and just make a few pass'es on the fine stone(or UF) after you've used knife a few times. Never let your tip come of the Sharpmaker rods(if you went with one that is) or it will round tip a bit. I havn't used my Sharpmaker on a dull knife, but if you bought the extra diamond rods I'm sure they would work fine for getting the edge back on a dull knife.

The one thing you never want to do is let one get dull. Touch it up almost everytime you use it on a steel or strop... or a very fine stone or rods if needed.

If you convex there are alot of good thread's you can search, and BRK has a good tutural on there site.
I've only convexed one knife. We never did that as a meatcutter, so I feel very comfortable working with a reg edge since thats how I learned.

btw- the tinkering/embelishment(or something close to that) room here on BF has alot of good sharpening advice.

Thanks for the input my friends.

I should add that it is a Busse Custom Shop snakeskin Cultellus. Not sure if they put a different edge on these than others.

Thanks for the info, Kenny. I have read SO MANY threads on convexing, and I thought that I might convex my Cultie, but life happened and I totally forgot about it.

I do have a sharpmaker...still in the blister pack. :p

Anyway, I definitely need to sharpen my Cultie and GW, and probably the XM-18 in my EDC rotation.

Btw Kenny...you happen to have an extra small sebbie with micarta inlays?

Well break that sharpmaker out!:p The 20 degree per side leaves you with an edge thats plenty thick , esp for a small non chopping knife. Any thicker and its not going to slice very well. INFI is easy to sharpen and the med stones will be all you need to start with. Just watch the CD and do the same and its a piece of cake. Don't drag the tip off the rods though, but thats the only thing you would have to worry about.

Later when you get the time you can learn to freehand a V edge, then learn to convex. The standard V edge is great on most any knife so i would learn it first, and feel anyone with knives needs to know the standard V anyway.

I'm so set in my ways I haven't convexed any of my Busse's. The ones that came with convex I'll keep touched up when needed. I did convex a thick little blade my brother made long ago... since he left to much steel above edge. Oh its super sharp now, but I put some scratch's above the edge... which I plan to sand out evenually. Wasn't bad for my first try at changing a V to convex. I would practice the convex(I sure need it) but dought I'll ever do another one. And getting one thats already factory convexed is easy to touch up if you don't let it get dull.

oh yeah, I only have the one small micarta sebbie's. If you get a small sebbie, the micarta inlay really helps with the grip since the plain small is kinda thin for me. The thing did bite me good last night while I was cleaning it...can't believe I cut myself... had been years.
