Sharpening a Meat Cleaver CHinese Style - VIDEO

Is there something specific you're referring to? I didn't watch the entire video, but it looks like normal sharpening technique on a waterstone. Only thing I noticed is that he switches hands.

Thanks for the reply. What I found interesting was that he seems to push the knife back and forth, and focuses alternately on the left/right/middle of the blade.

In other videos, sharpening smaller knives, the people were doing one diagonal push up the stone, then a diagonal pull back for the other side of the blade.

Theres all sorts of different sharpening techniques it depends on what the person is comfortable with and the kind of stones they are using. If you google waterstone sharpening you will find lots of videos showing the technique used in the video.
