Sharpening a Shave Ice Swan Block shave blade

OK, I need help.
I have a need to resharpen a lot of these blades. Swan SI100 blades that have a razor sharp edge with a double bevel on one side.
I have ordered a grizzly 10 inch wet grinder. Can I get satisfactory results using it? How do I cut the double bevel?
Any idea what the angles would be? I assume I grind the long angle then finish with the narrow sharper angle. Do I hit it with thet 100 grit wheel or reset and do it with the strop?

Not being at all familiar with ice shavers, is there a chance that the blades need to have a certain clearance to anything? Sharpening them would create a larger gap which may make the system less functional. But as I say, just a thought since I have no idea how they work.
In general with something with a double bevel, you only need to work on the final bevel, so careful use of a wet wheel should do the trick. I would say try just with the wheel, and if that doesn't get the edge you need, go to a finer wheel. A strop of any sort is going to give a slight convex to the blade which I don't think is going to be ideal. Plus going from just the grinder to a strop is a pretty far jump.
Of course I'm assuming you are using these to shave ice with.
