We've been going thru stuff at my Mom and Dad's house in Oregon organizing and cleaning. I came across this beauty in with Dad's filet knives.
It's a 14 inch (35 cm) Victorinox ham slicer. Showed the pic to my wife and kids and my eldest daughter said she'd take it. After all, her husband is Swiss. :wink:
It was a little rusty and the edge was pitted in a few places so I thought I'd take it home and use my Wicked Edge. Turns out a thin 14" blade is beyond my meager skills. Looked up knife sharpeners on Yelp and there was MAC Knife listed. Figured they'd be able to sharpen this without a problem. Stopped by their showroom this morning and talked with the owner (I think his name is Harold Arimoto). He said his son does their knife sharpening and would be in later in the day. Filled out the work order for $18 and then we talked knives a little bit with him showing me how very sharp his knives were and some of the various series available and me showing him my Glorious Sebenza and talking about KAI and Shun a little.
I asked if he would mind if I took a couple pics to share. He said go right ahead. Here's their small showroom and office.
Got a call around lunch time saying my knife was ready. My wife and I were just finishing lunch and she suggested I should get a couple pairing knives while I was there. No problem I said.
Stopped to pick my knife up and Harold showed me the finished work. It was now razor sharp and the blade edge was nice clean. Sliced newspaper in thin little pieces. Wound up buying 2 HB-40 pairing knives. Harold was very generous and gave me a very nice carrying bag and a roller sharpener as gifts. Not a very well known kitchen knife company, but apparently there is a very loyal following among chef's.
