Sharpening advice for the 5.

Ok so my 5 came in this morning and I wanted to run the knife on the ultrafine stones of the sharpmaker. When I tried to sharpen it at the 30 degree side the stones didn't even touch the bevel at all, just the shoulders. So I went to the 40 degree side and it barely touched the edge, so I had to lean the knife out a little so the stones would hit the edge.


So, what is the angle of the edge on the 5? Should I not worry about back beveling and just keep sharpening on the 40 degree setting? Also should the knife just keep a 40 degree edge for strength? Any info is appreciated. Thanks.
 
How much is it off? Normaly the esse knives at around 20 per side. However they are hand sharpened so they could be off by a degree or 2.
 
Take it to a coarse hone a grind it at a lower angle until you get a burr on both sides and then finish it on the Sharpmaker.
 
They're ground at about 20 degrees. If you're going to sharpen it on the SM in the future anyway, you won't hurt anything running it through there. If you have to go back to the brown stones, then white, no harm no foul. A user is going to get sharpened eventually.
 
Remember that all ESEE knives have a hand-applied edge. So that 40 degree setting (20 on each side) is going to vary because human's aren't robots ;)

It would be fine to just sharpen normally. And that microbevel that might happen isn't really a bad thing, it would make the edge a bit more resilient in fact. But eventually your edge angle will "catch up" to the 40 setting on your sharpmaker after several sharpenings.
 
I'd convex it if it were mine. Probably start at 120, maybe even as low as 80grit, (but only for a short bit), then up to 150, 220, maybe even 400. By then, I'd be finished, and would just use the sharpmaker (or the doublestuff that I have) to sharpen it.
 
I would knock the shoulders off to make it a better slicer than like some guys have said before put a 20 degree angle on the edge to give it durability. Either way good luck with it, I am sure it came very sharp and 1095 is great to sharpen.
