Hello.......My free-hand sharpening skills...for lack of a better word....SUCK! The only other thing I have available to sharpen with is a Spyderco Sharpmaker. I am having problems even with it. I can get my knives very sharp...well atleast they seem that way. They will shave no problem..(my forearms are hairless) but they get dull after first moderate use. From reading alot on here I am gathering it is the whole wired edge/burr problem..but I cant get it figured out. Can somebody PLEASE talk me thru this? Thanks in advance.

There is a thread in my sig that might answer some of your questions.

What blade steel are you using and what are some of the things you are cutting?

using my folders on cardboard and such...........my kitchen knives on food. Had my Gyuto as sharp as ever...cut up 5 pounds of potatoes and it is noticably dull.
Same with my folders....run them over the Sharpmaker and they seem fine....go cut a few pieces of cardboard and they are very dull...UUGG!

Sounds about normal, cardboard is actually very rough on a knife edge. Using different methods like microbevels could help but you need to have a good uniform shape to your bevel first. What you do to a bevel can have huge effects on cutting performance.
