Sharpening Angle for Green River Thin blades in 1095?

I have the Buffalo Skinner and the Sheep Skinner along with a couple of others and currently use a Lansky sharpening system and was wondering what the best angle would be for a razor sharp edge for cutting up Deer and Hog?

You can start with 15° per side. That is a good place to go from. That steel may well be able to handle a bit lower, but contact on bones etc will come into play.
 
15 will probably be just fine. My sheep skinner is convexed with a slight micro bevel and it holds up real well. The edges on these are already pretty thin. Honestly if you have a couple of them why not do a little experimentation? Test out different edge geometries, could be fun.
