Sharpening angle for SAKs?

I'm trying to sharpen correctly for the first time. question: Using a Lansky system, what's the factory or correct angle for SAKs, 25 degrees or 20 degrees? Also, how about a spyderco delica. thanx for your help.

The correct angle depends on what you are using the knife to do. The lower the angle the better it will cut, but the more likely it is to be damaged. Some trial and error is in order. However it takes fairly extreme use to require 25 degrees per side. I would suggest 15 degrees if possible, or the closest to it.

When you sharpen a knife for the first time, it takes awhile usually as the initial edges are often a little off, and not very consistent. So it takes some time to get an even edge ground all along the blade. Check Joe's Sharpening FAQ for more details.

Just to further clarify, the factory edge on the Delica is 15 degrees on each side, but they recommend that for general use, you sharpen it at 20 degrees on each side. Personally I'd leave it at fifteen.

Why not try both? Just do 20 for now and see how it holds up. If you do alot of aggressive cutting/carving, then bump it up to 25.

Thanx for the info. I think I'll start with some old SAKs at 20 degrees and see how it goes. I'll leave the delica alone for now until I get some practice.

sounds like a good plan - experience is the best teacher
