Sharpening Angle

Paperwork with my nib 503 talks about "Edge 2000" and the fact that the blade angles are now 26-32 degrees, a change from the previous 35-50 degrees. I've been using the Sharpmaker at 40. Should I go to the 30 degrees on knives after the year 2000? Sorry if this is an amature type question that's been discussed before. :)

Yes. Give it a good sharpening at 30 degrees, then do touchups at 40 for a while because it's faster (and doesn't affect cutting ability that much for a very small bevel) until the 40-degree touchups add up to make the edge too thick (probably not for a long time), then give it another good one at 30 again, and you are once again set for a while.
 
I'd like to get one of those sharpeners that clamps the blade horizontally, then you use a long flat paddle to stroke the blade...there's some kind of adjustable shelf or tree or something to set the paddle on, with height adjustments for different angles...

But I have no idea who makes it...or what it's called...or even if there is such a thing...maybe I just dreamed it... :rolleyes:
 
:cool: ...Quite a dreamer huh??...Dreamt of possibly a Lansky or with a more intense dream it may have been an Edgemaker Pro...there's a few more like those out there as well...Some imagination you have there Mr. Chickentrax...LOL...:D :D
