sharpening choil

in what way having that small choil helps sharpening ?

it allows you to keep the edge straight. i'm sure you have seen blades without one that end up looking like a recurve blade

That way your sharpener can get "all the way to the back of the edge" (if the edge goes all the way to the ricasso, for example the Delica, sharpeners like the Sharpmaker can't get to the way back of the edge touching the ricasso).
