Sharpening convex knives

This is knife I make for my son from 5mm. thick 12519 steel . Blade is something between full flat and convex .I grind full flat but I left thick edge before HT and after that hand sanding like it was convex till it s get sharp .Finish is 800 grit sand paper . Now it is very sharp but don t bite like I want .Any idea how to sharpen this knife with 400 grit sandpaper and to keep 800 finish ?

Did you strop at all? Sounds like you could have overstropped. 800 grit should have plenty of bite. Unless you are going for a really toothy edge in which case use well used 400 grit to put a micro bevel.
 
Yes I strop but just a little . . . micro bevel ? How ? In the same way as I do it before or with sharpening tool ?

First off, the knife turned out beautiful!

Personally I'd give it to him and let him maintain/sharpen it to suit his fancy. If the geometry is good you've taken it over your finish line.

If you really want to get into it you can go back to 400 grit and get it cutting the way you want, then color the edge with Sharpie and put an 800 grit finish on it, stopping just short of the actual edge.

You can also take it to 800 grit and then microbevel on a 400 or lower grit solid abrasive like a crock stick or Crystalon stone.
