Was wondering if anyone sharpens thier convex grind knives on a stone?? the documentation that came with my f-1 gave simple instructions on sharpening, stating that you should attempt to carve thin slice off the stone..and since noone is able to hold a perfect angle by hand that this will maintain a convex grind....is there any dange that sharpening by this method may damage the knife??

Be sure to maintain very light pressure, like just the weight of the knife as you pass it. You can also pull the knife so the the stone surface travels away from the edge as that removes less material with each pass (kind of like as if you were stropping on the stone.

The best way is to use wet and dry of various levels, on a piece of wood, it naturally follows the convex (stripe away from the edge) and you can get a razor edge. Also with convex don't use a free strop, use a piece of lether glued to a wood block, that then also follows the conex and stop you accidentley rounding the edge a bit.
