It seems strange to me that all of my knives when they come from the manufacturer have the blade sharpened at a 90 degree angle.
it`s easy to see it has been done on a wheel or belt grinder.

but when it comes to re-sharpening the blades, all the sharpeners i have seen sharpen at 0 degrees along the blade.

I suppose it`s just a matter of practicality.

Hmm, I don't know what sharpeners you have seen but none of the guided systems I have used sharpen totally lengthwise along the blade. I reckon that my most common angle, going by the scratch pattern before I polish the bevel, is about 45 degrees.

The Scarb will abrade along the blade, most systems like the Sharpmaker, Edge Pro, etc., will abrade close to perpendicular.

I mean the sharpening direction, not the angle.

It`s hard for me to describe.

I assume you mean the sharpening lines are 90 degrees to the blade edge.

Pull through sharpeners would then be 0 degrees.
