I want to sharpen a Global Carving knife and am not quite sure how to go about it, esp. in terms of geometry and edge angles. There appears to be a small bevel on one side and a flat/slightly convex edge with no bevel on the other. Am I seeing this right? I don't know if someone has changed the knife.
