I have a few DMT benchstones but am concerned about getting a consistent angle. Is there something like a plastic wedge or some other simple device I can use to help??

Yes, there is, these are all simple/free devices you can make... some don't even require making

leaning your sharpening stone against a wall or book to make a bench stone sharmaker and just slice down the stone and pivot for tip

For what its worth.. On benchstones I cut a piece of scrap 2x4 to any angle I want to sharpen with and set it on the stone. Say 20 degrees for example. Then I set the knife on the block and push the knife down the stone leaving the block behind. Its not foolproof but it gives me a nice reference point anytime I want to check to see if my angle is wandering from where I want it. Don't ride the block down the stone or it will wear out the block quickly and gum up your stone. If the block gets lost or tore up just make another. Find a buddy with a mitre saw or a table saw if you don't have one and it should be easy to cut some. Price = cheap or free.

I think of it sort of like training wheels. I use the angle block less and less as my freehand skill increases, but its still there if I want to check. Using this method has helped me get my freehand sharpening techniques results improved from "OMG what did I just do to that poor knife? Its worse than when I started" to "a consistent edge that will push cut paper and shave arm hair". I have plenty or room for improvement but those little blocks of wood have helped a bunch.
