Sharpening knives...basics to advanced...

Just registered on this site tonight! I love knives. Even though I'm an older guy, I don't really know much about the different steels, but I'm learning.

Right now, I'm learning everything I can about sharpening and it is amazing how many different ways people sharpen knives. Some say simple--do it by hand easily after practice. Others say--I could not do it by hand if my life depended on it--and I need a guide. All kinds of systems and gadgets. All kinds of metals and bevel angles. Pretty interesting to me. I was surprised to see there is no area on this site dedicated specifically to sharpening. Is this information mostly in the maintenance area? Thanks.

Sharpening is a never ending learning process, it takes years to fully understand and many more to get right. There are many systems to choose from but when the lights go out hopefully you got candles to burn.

If you go with a system of any kind, they'll come with their own set of instructions, but the article covers the basics of why they work the way they do.
 
I really learned a lot from Leonard Lee's book. While it's mostly for woodworking tools, it has good general info on sharpening knives as well.
