What angle should I use, the 40 or the 30? Any suggestions on how to speed up the process since CPM440V is so tough?

My understanding is that most Spydies come from the factory with a 30-degree grind. So you have two choices: maintain the edge at 30 for super sharpness with slightly less durability, or sharpen the very edge of the edge at 40 for a little more toughness.
