Sharpening oddities...

I can seem to put only only a convex grind on all the knives I sharpen.

I keep the knife at a 20 degree angle on my stone and keep it at that angle but it still manages to turn out convex.

Any tips on how to stop this, or am I just cursed?
 
Sounds like your stone isn't true, or flat. Get a straight edge, shine a light and see if you can see more then a wisp of light between the stone and the straight edge.
 
Even though your stone may not be true, when hand sharpening there is a natural convexing that does take place.
 
I think most free hand sharpend edges woud come out convex for the most part because of the few strokes that are not going to be maintained at that perfect angle for an entire sharpening session. Also, if your shooting for a double bevel or your trying to lightly remove a burr with an increased angle for a few strokes, your defenetly not going to end up with a single beveled edge like a fresh out the box knife.
