Looking for advice on stone progression with different stone materials. I have the Hapstone M2, and I have a few knives with uneven factory edges that I'm going to set at a known angle and balance them out, these will be in S30V, M4 and M390.
I have SiC stones in 120, 240, 600, 1000, 2500 JIS Standard
and I also have bonded diamond in 400 and 800 FEPA-F standard.
In actual grit order it would be 120, 240, 600, 400D, 1000, 800D, 2500 for full progression.
Would I be better off starting with courser SiC or jump right to 400 diamond to start?
Any input would be appreciated.

I think it really depends how much metal you need to remove. If the edge needs major reprofiling, I'd start with the SiC. Otherwise, just start with the 400 diamond.

There's nothing wrong with starting out on the 400 grit diamond. I've used the Venev 400 grit several times to set the bevel with my Edge Pro. It's not super coarse but it cuts fast which I like. Unless you find you need to remove a fair amount of steel you may want to go to the coarse SiC stones to speed things up.
