Sharpening questions

I got a sharpmaker for christmas and have touched up a few knives that were losing the "touch". I put it on the 40 degree setting with the fine rods and they were back to sharp again. My question is how do I determine to sharpen at 30 degrees or 40 degrees?

Did you watch the DVD that comes with it?
