Hey everyone just joined, I'm travelling Aussie and sharpening knives along the way, once I get back home I want to carry on and create a small buisness. I sharpen large to small kitchen knives and filleting knives mostly. Iv narrowed my choice down to the TSPROF KO3 or the tormek T8 which one would you choose any why.?? I'm not worries about price

I would go with the Tormek, simply because you won’t have to worry about wear on the stones for a while. You’ll get even wear since it‘s constantly turning and using the whole stone.
 
For professional use I would definitely go with the Tormek. Guided systems produce beautiful results, but they are slow as hell -- particularly if you're reprofiling. I guess people are generally getting what, about $10 per knife? Better to make $60/hr. with the Tormek than $5-20/hr with a TS Prof. 😉

That is, unless you can build up a clientele that's willing to pay a premium for perfect mirror edges.
