Sharpening Video

I like the rule of thumb idea for getting a consistent edge on bench stones. I need to try that out. Thank you for posting the video.
 
I used to try to do this and got so frustrated all the time. I use a guided sharpener now and don't have to worry about it.
 
The 'rule of thumb' guiding technique works pretty well. I do a lot of sharpening with the edge of the blade facing me - so I use my index finger at the spine in the same manner, lightly brushing the fingertip along the stone, behind the blade. When I'm holding the stone in one hand, I use the thumb of the knife hand to apply a little pressure just behind the blade's edge to feel for and maintain flush contact at the bevel, while the index finger acts as the guide. If sharpening with the stone on the bench, then I'll use one or two fingers of my off hand, placed just behind the edge bevel to control pressure at the edge's point of contact on the stone. I do occasionally flip things around though, with the edge facing away and using my thumb at the spine as shown in the video.

Some might misperceive how that affects the thumb or finger acting as the guide, assuming it would abrade the skin. It really doesn't, unless you're exerting way too much pressure. If your thumb / finger is bleeding or hurting, you're doing something wrong. In essence, the thumb / finger is just along for the ride, very lightly skimming the surface of the stone. If the stone is lubricated, so much the better and easier.
