I have had my ep for about 4 months now and I really like it. Every once in a while though I have a knife that the machine takes more metal off of one side. So it looks kind of goofy because one side has a bigger polished edge than the other. It is ALWAYS on the right side of the knife. Im sorry if my wording is confusing. Is there something that I could be doing wrong? All replies are greatly appreciated!

Well, if I had to guess based on my own experience, you're spending more time on that side than the other, or your blade is shifting a tad on the table. I'd guess you're right handed, so are most comfortable holding the working arm in your right hand. Hence, when working with your left hand guiding the stone, you spend less time or have a different technique. Or, possibly, when you're holding the blade in your off hand, you're holding it to the table slightly differently.

Thats the weird thing I am left handed. Maybe I am spending to much time on that side.

Possible, I'm a leftie and I have a rather bad habit of spending most of my time with the knife's grip to the right, and the stone arm in my left hand. I have to deliberately stop myself and switch it, on occasion. I was probably missing your definition of right and left with regard to the grip.

Another thing that I have a bad habit of doing is after I put a mark on the edge i stay on that side until the mark disappears. I should be counting the same amount of strokes on both sides right?

If that were the case, the knife would have a higher polish on the left side. My suspiscions are that you are not holding the knife in the same place once you flip it over to do the other side.

DOH! Of course. Otherwise you are shifting the edge from the center to one of the 2 sides. That is the first thing said in the videos. ;)

Ok thanks guys. RevDevil your right i probably need to rewatch the video its been a while haha.

I do have one more question though. If one side is taking longer to remove the mark what do i do? Do I keep doing the same amount of strokes on both sides with the coarsest stone until the mark disappears or do I do a set amount and keep progressing through the stones? That wouldnt accomplish anything though because I wouldnt be sharpening that side of the edge enough, now ive confused myself. Sorry guys Im still new to sharpening.

Same number on both sides until the mark is gone. Sometimes one side is done before the other but you have to keep doing the same on each side until both are to the apex.

I do sometimes find uneven bevels and I hit higher on one side than on the other. I just work on the side where I'm hitting lower until I get even, and equally wide bevels.

If the blade grind is off center then one side should have a wider edge bevel. That doesn't explain why its always the same side but is a possible cause.
