I have a ZT 0300, had it for a couple of weeks now and a week or so ago I bought a Spyderco Sharpmaker. Using just the corners of the rods I've got the blade shaving with ease. But I was wondering if there is any point in using the 30 degree slots to remove the shoulders from the blade, or even what that would mean. If not, in what kind of situations would you want to remove the shoulders and how would it be detrimental if I did take the shoulders off?
I used to think I had pretty much all of the answers when it came to knives, but you guys have shown me how much I need to learn, so I figured this was the place to take this question.
Thanks for the help.

The shoulder is just to top point of the existing bevel, by sharpening at 30 degrees you will be changing the whole bevel and not just the shoulder. You will most likely need the diamond rods or wrap coarse sandpaper around your existing ceramic rods to do such a job, S30V is very wear resistant and would take forever and a day to re-profile with just the brown ceramics.
