Sharpening

So I am new to it. When I raise the burr on the first side,what do I do next,,flip the knife and do the other side? Or does the burr need to be knocked down? I am confused.

I'd look at the 2nd one, all about sharpening.

Me personally, I work the edge until it burrs, flip over til it burrs again. Then move on to next stone. Usually at the final stone it bends/breaks off. I've been told to bend it rather than shear it off (they sell felt/cork deburr pads), I avoid that and prefer bending (like slowly bending soda pop tab off instead of ripping it off).
