sharpening

Don't have a PorkShank, so don't know what sort of edge grind it has. But if you can sharpen any other knife, then you can sharpen your Busse. There is no 'best method', there is only what works best for you.

Thanks but I guess i shoulda just said whats best way for sharpening infi steel? Just curious of anything works better or if anything I should stay away from when sharpening infi.
 
Nope, nothing special about sharpening INFI; it is not one of those hard to sharpen super steels.
 
I would say all you need is a loaded strop or ceramic stick to keep your edge touched up, unless it has been damaged or won't cut to begin with. In that case, if the edge is rolled you would then use a burnishing steel to alight the edge, you might also want to remove some steel from the edge with a stone if it needs it.

+1 to the ceramic stick- using that on all my Busses (have Pork Shank too).

Looking into this as well; anyone have any experience with the 'Wicked Edge' system--seems to look good on those I've seen here on the forum... also wondering if anyone has advise on a sander?

Wicked edge is a great system but it's limited to smaller blades IMO. Anything bigger than a MS is going to be hard to sharpen on it.

As for a grinder, if it's just for sharpening go with the harbor freight 1x30... With a little practice you can get just as good edges as you can with the wicked edge only faster and on any size knife.
 
If you're worried about scratching it up,You can send it back for a free sharpening from the shop minus shipping :)..
 
The HF 1x30 is a good value, and easy to learn and use. Just be careful with the tip of your blades. The one drawback is that you can only do a convex edge. The machine has a platen, but you cannot really flat grind against the platen as the knife will chatter badly.
