Sharpening

How often do you need to resharpen? Lately my knives have really been getting a work out. I have pulled out my sharpening gear every weekend and have needed to give a few of my knives a real good sharpening. A quick touch up is all I normally need to do but not for the last month or so.

Hi DB,

I sharpen my knives whenever they start to drag, and not cut the material cleanly. I also recommend a strop, it helps to extend the time between sharpening.
