Don't by stones, use diamonds, ceramics and a strop. I think for the average person that does not want a large investment or learning curve that you can' go wrong with a blue DMT diamond, a set of 20 degree crock sticks, and a peice of stiff leather such as a old belt, glue the belt to peice of wood, it must be ridgid. The strop does not have to be loaded with abrassive but it works faster if it is. Almost any buffing compound will work. A word of caution I find most people strop to much which will form a very sharp tiny wire edge butt dulls to quickly unless your blade is a very fine grained and very hard steel.
