What kind of edge is put on the ESEE knives?

I presumed they are a high flat grind, but I have read a few places that they are convex?

They are flat ground to 20º per side and 40º inclusive. Convex edges on ESEE's are custom i believe. Still lovin' my Izula

So what is the difference for sharpening the flat versus the sabre?

None. "Grind" is different than "edge". The last bevel is he edge. You can have a convex grind and a flat edge or a full flat grind and a convex edge.

It doesn't really matter what the grind is (as far as sharpening is concerned) just what kind of edge you want.

I want to keep is as close to how it started but razor sharp. I'm having a problem getting my ESEE 4 as sharp as my 5 or my Fallkniven F1 which is scary sharp.

As many others have reported already, the Sharpmaker really works well on ESEE blades and I use one routinely for that purpose. However, if I could buy an Izula II (among others) w/ convex factory grind I would abandon the Sharpmaker in a minute...
