My sharpest knife with the best edge retention is this 1075 skinner made for me by RichardJ. While we all know about his sharpening skills, not enough of us know about his heat treating skill. His blades will work like nothing else I've used.
At the moment it's probably either the Hogue EX-01 that i just sharpened or the Manix 2 CTSBD30P that I sharpened before that. The latter probably has the best edge retention of the knives I own.
At the moment, it's my ZDP Endura beveled at 22 degrees inclusive and finished with 600 grit moldmasters on the Edge Pro. Knocked the burr off with a few strokes on a diamond paste loaded strop. Freaky, just freaky...
