I know you don't want to hear this but my variable speed grinder is the "cat's meow" when it comes to sharpening.....

Having used a spyderco sharpmaker for many years, and being generally happy with the results- i decided that i needed the ability to adjust the angle for different knives. i purchased an EDGEPRO professional and i have been very pleased with the results.The pro model is expensive, but very well built.it gives me the ability to sharpen any knife at its original angle or even modify the angle to suit the blades mission.it is easy to set up and takes only a short time to learn
