WhenI first got a Sharpmaker, I was having trouble with my larger knives. While touching up my SMF, I realsied that I was subconsiously using a lot more pressure sharpening my larger knives.
That's easy to do. If you think about it, just the weight of the larger & heavier blade will greatly increase the pressure exerted in a very small contact area of the edge. All the more important to compensate for it. Assuming the same edge angle and level of sharpness, the steel at the very edge will be just as thin & fragile on a large blade as on a small one, so it's critical to protect it by minimizing the 'load' felt by that thin, fragile edge.
I have developed a habit of visualizing brushing dust from the rods using the edge of the blade, as if the rods themselves were a precious artifact that would be ruined forever if using too much pressure. That seems to really help me regulate the pressure used on them, and the finished edges are always better off for it.
