Hi, When my Relatively new Delica and Dragonfly in VG-10 need to be sharpened should I do it on 30 or 40 degrees?

Yesterday I got a Case Teardrop, my first knife with carbon steel and my first wharncliff blade. It needs to be sharpened. Has trouble with paper even. The package insert says 10-15 degrees. Would this mean the 30 degree setting?

Thanks

Re the Case, I strongly suspect that it is (at least) 15 degrees per side, or 30 degrees inclusive (for both sides). That would be the 30-degree setting for the Sharpmaker.

For the Spyderco knives, I am not certain how they came from the factory, but I like to sharpen many of my Spydercos using 30 degrees and then move to 40 degrees to put on a small micro bevel. The micro bevel provides a little added edge strength (versus just the 30 degrees alone) while allowing for quicker touch-ups that you get with a 30 degree back bevel.

If you don't want to do the above, you can always mark the edge with a Sharpie marker and then make one or two passes on the Sharpmaker. When you find the factory angle, the marker on the edge of the knife should be gone after a few passes on the sharpener.

40 or 20 per side.

ive found most japan and taiwan spydercos come closer to wider angles than 30 inclusive and even 40 inclusive. find the edge angle and adjust your hand angle to match it. sharpie trick works wonders when you cant figure out the edge.
