i used to hear a lot about the chef's choice sharpeners, but now all i read about is the sharpmaker or the edge. what's better, the sharpmaker or the chef's choice. both about the same amount of money. thanks for the help!

I think that the general belief is that the Chefs Choice grinds away too much steel. I have owned both and the Sharpmaker, though slower, does a much nicer job, removes less steel and gives a sharper edge.

I have both sahrpeners. The Sharpmaker wil let you put a great edge on your high-end kitchen knives. I use it to sharpen my Shun and Henckels knives.

The chef's choice will put a decent edge on a knife, but I wouldn't use it on any high-end knife. I mainly use it to sharpen my cheap-o low-end kitchen knives. It is a lot faster than a Sharpmaker, and I feel like I would be wasting my time putting a great edge on an OK, cheap-o knife.

So, in summary - Sharpmaker = great for sharpening high-end knives

Chef's choice - very good for sharpening low-end knives

The sharpmaker is much more portable and easy to store (import when you are camping, etc.). It works.

The sharpmaker can be quite fast if you buy the optional coarse diamond rods.

I have both and agree that the Chef's Choice takes away too much steel. It is plenty handy but is not for top quality knives; also it does not work very well on short blades.
