what weight leather do you use

I used 8 or 9 oz stuff from texas knifemakers supply. Other people use up to 10 or maybe even 12 oz, but the 8 to 9 oz stuff is good i think.
 
Vegetable tanned 8/9 oz. for the body and 12 oz. for the welt from Muir McDonald (spelling?)

The 8-9 oz leather is good for small fixed blades and folders.
It is a bit thin for medium and large knives where the thicker leather is a must.
And I feel that the keys to a good
leather sheath is a wide spacer cut to fit the profile of the knife and a tight fit. And always use the double needle method of sewing with the heaviest waxed thread possible and back stitch at least four holes.

My brother and I purchased some scrap leather used in making purses, it is about 5/32" thick. What would be the oz. rating of this?

You can be almost certain the leather you have is chrome tanned. Be careful using it.
It will tarnish some metals quickly and can rust knife blades. I would buy a thin low cost vegetable tanned split and bond
your leather to it.
