Would white metal or Aogami be a better steel for chopping?

Aogame hagane and shirogame hagane are not specific steel types. White steel is a simple non alloy high carbon steel that is available in more than one grade. Blue steel refers to a chrome moly alloy steel that also comes in more than one grade. The colors blue and white are the color coding used for the paper the steel comes wrapped in.
