should I convex the zaan????

Well not to long ago I got an umnumzaan. I love it!!!! It the most solid nicest knife I've ever had. I've got a couple covexed knives from like brkt and fallkniven. Should I have the edge convexed on it do you think?? I posted in the main forums about drawbacks to convex and got no replies. But if the convex is the bees nees or whatever howcome all knives arn't convexed??? At least higher end ones. I just want to know everything I can before I go screwing with a 400 dollar folder. Thanks
 
Just strop it over good and see how you like it. You can always put a hard bevel back on.

With my Sebenzas, I tend to maintain them on the strop for a long time, and then regrind the V when they get too far gone to pop back.
 
I worked mine over on some ceramic sticks and then stropped the hell out of it and it now has a very sharp edge that works well for my tasks.

As far as convex goes, there is NO sharper edge...but remember that the thinner you make the edge the higher the risk of chipping.

I have some knives with convexed edges that are just dangerously sharp.

If your tasks require an edge that sharp ...i suggest you go for it...if not then some work with some ceramic sticks like the spyderco and a good stropping will give you a very sharp edge that will retain the factory look and most likely perform your daily tasks well.

which ever you choose to do, I'm glad to hear that you intend to use this knife.

Its a great knife. (IMO)
 
What? The factory grind on the 'Zaan sure looks like a hollow with a 15-17 degree secondary bevel :) ...
 
They aren't fully convexed but the cutting edge is lightly convexed.
 
Did not notice it on mine when I ran the factory edge down the flat side of a pair of fine Sharpmaker triangles. The hollow has not left enough steel to warrant a convex for my tastes. However, I would not hesitate to convex a flat ground XM-18...
