Should I polish my ZT 0561 Blade?

Should I polish my 0561 Blade? I used to have a Kershaw Speedform 3550 and I took it apart and polished out the Elmax blade and I really liked it it turned out so well that water would bead off of it and wiping it off after using it was really easy. I had planned to Polish out the flat ground part of the blade something like a Rockstead but it came in the mail and it has that tough coating a lot like my Benchmade 581 (considered polishing that one 2). My question is am I making a mistake by taking this coating off of part of the blade? Does that coating do anything helpful other than reduce glare (I would rather it be shiny)?
 
If its a 0561 then it isnt coated, it is a stone wash finish on the steel. The sw will reduce glare, and I think it holds up to stains and wear better than bead blast. I say polish the blade then post pics

Nice... I can still see a few scratches that I didn't get out along the way and... unfortunately there are a few small pits in the blade :( not sure how common that is.
