should I reprofiled my knife

I have a small Daniel Koster drop point in 01 it comes with a convex grind. but I guess I could sharpen with a mouse pad in some sandpaper, but I have no experience with this method and not sure what results I would get. I have a full sharp maker set up including diamond rods. and then thinking about reprofiled it. to 30° inclusive, I know I can do this cleanly and get a good edge, but it would ruin part of what makes this knife different and custom.

I tried it with the sandpaper 600 grit and then a very worn down piece of 600 grit, it came out razor-sharp better than I expected and didn't take long. scuffed up the blade a little bit but that's down to practice.

Great! I wish I could figure out convexing, they always end up dull, and I just end up re profiling to a straight grind.
