Should I use mineral oil for this stone?

Mineral oil would probably work fine.
When I get new old stock stones though I try them with water first and see how they perform.

The bond strength and density of stone are different on a lot of these old stones and some will work well with water, others not so much.

My Mother in Law has that stone and I have tried it with water and that goes thru it. It's a bit porous. I tried it with heavy mineral oil and that was only a little better. I put a layer of Vaseline on it then mineral oil and this works. At the end of your sharpening use light strokes. DM

Mineral oil is only good for the stone and to clean the knife, not to lube the pivot system right?

I do at times use it for pivots as it's food safe. But there are better lubricants on the market. DM

If you keep the knife clean & dry after using it, most anything will work fine for the pivots. Most problems come up if the knife is poorly maintained for an extended period of time, allowing dirt & other grime to clog the pivots. If you clean it after dirty uses, and add a drop or two of mineral oil after doing so, it'll be fine. Excessive oiling of any kind is also problematic, as it'll be more prone to collecting the stuff that clogs the pivots. Keep it light.

Different viscosities of mineral oil can make a difference also. In the same vein of 'keeping it light', a thinner & lighter mineral oil is what I favor for pivots. Norton's Sharpening Stone Oil is very good, in that regard. It's also 100% mineral oil, and food-safe as well. The thicker grades of mineral oil, like the laxative stuff found at pharmacies, may tend to get a little gummy/sticky, and more so if dirt is also present.

Mineral oil is all I've used on pivots, for a while now. I use it on my stones, too. :)

I just got the 99.9 stuff at walgreens. It says it's a laxative. I just want it for oil stones. I prefer to try a thinner oil for the pivot system.
I'm thinking of trying Nano oil or benchmade blue or BRS new lube. I also need to get loctite to change out and clean hardware.

Tractor supply had a huge container of mineral oil for like $20 but I didn't need that much.
