When I saw DN'S display at BW I went searching for a real
pigs head and was going to stab a few user knives into it
but to no avail!:(

LMAO!!! Come on down to South Texas theres a pig head in every grocery store! Can you say "Barbacoa"?? :D :barf: Good god its really disgusting to watch! But the taste is not bad:p ;) Well, as long as one doesnt see the process first!:eek:
 
Is Barbacoa the same thing as head cheese?

Or is it hog brains? If you have never had scrambled fresh hog brains and eggs, you owe it to youself to try it. Like the best scrambled eggs you ever had, only better.

When I was a kid, this was the best thing about hog killing in the fall - fresh brains and eggs.
 
I was always under the impression that barbacoa was the cheek meat.

At least that is what they told me at a local mexican restaurant. It makes great sammiches and burritos.

If anyone is ever in Columbus, this place is on the far west side. El Nopalito.

I just get the 'Pork Brains in Milk Gravy' in the can for great 'brains and eggs' in the morning. I remember coming home from school and finding a pig snout poking out of a big pot on the stove. Down here we eat everything but the OINK! :eek:
